For people living with others it might not be a choice though. The lights not working for a day the way they normally do is all it takes for someone to lose all faith in automation. It’s easier when you plan for a specific time and day to update things, as long as you are not exposed to the internet, slightly out of date apps are not a big worry
I get that, but the services listed by the other comment run just fine in docker with less hassle by throwing in some bind mounts.
The 4 VMs dedicated dockge instances is exactly the kind of thing I had in mind for people that want to avoid something that sounds more like work than a hobby when starting out. Building the knowledge takes time and each product introduced reduces the likelihood of it being completed anytime soon.
I would give docker compose a try instead. I found Proxmox to be too much, when a simple yaml file (that can be checked into a repo) can do the job.
Pay attention to when people say things can be improved (secrets/passwords, rootless/podman, backups), etc. And come back to them later.
Just don’t expose things to the internet until you understand the risks and don’t check in secrets to a public git repo and go from there. It is a lot more manageable and feels like a hobby vs feeling like I’m still at work trying to get high availability, concurrency and all this other stuff that does not matter for a home setup.
By then you would have racked up thousands of dollars in legal fees. Not to mention if anyone posts anything negative about the current administration you could be used as an example.

While not as bad, my dad is kind of like that with phones. I installed Linux mint and honestly as long as the same ginormous Firefox icon (which I told him was the internet and YouTubes - same as windows) is around, he can still get to his karaoke and YouTube videos.
On my side I know it is pretty much impossible for him to get a malicious executable now, every few weeks we do upgrades when I visit which are a lot faster than windows updates.

In addition to your comment, I would add to include apps that don’t sound “as interesting” or different from your usual picks. Along the way, it helps to be willing to refactor if you see a different way to implement it. This can help turn a routine task into a more interesting challenge.
The saddest part is the beefy 5 layer burrito being what people that worked at Taco Bell would order and ask for it grilled for a reasonable cheap meal to now resulting in “WTF is there any ground beef here? WTF is there real cheese? Are these ‘beans’ safe to consume?”

Machines will do exactly what you tell them to do and is the cause of many software bugs. That’s kind of the problem, no matter how elegant the algorithm, fuzzy goes in, fuzzy comes out. It was clear this very basic principle was not even considered when Google started telling people to eat rocks and glue. You can’t patch special cases out when they are so poorly understood.

iOS devices are pretty horrible at keeping a background task going unless apple owns it. Probably why they can get great battery life, but also seems pretty anti competitive. Not even google’s photo backup works well unless you manually open the app once in a while.
